Kesar Pista Biscuit

This is my first post and I am too excited. I love baking more than cooking so my first post had to be something related to baking :mrgreen: Presenting kesar pista biscuits. These are easy to make with the goodness of pistachios and saffron 💖 These gets finished in no time after baking. Me and my husband, relish them with a cuppa tea 💑 I shared this recipe with my bestie, she baked them for her FIL and the reviews she got from him was just awesome. She baked it four times back to back on her FIL’s demand. This is one no fail recipe and tastes absolutely delicious. The recipe has been adapted from here.

Ingredients:

1/4 Cup Butter
1/4 Cup Powdered Sugar
1/2 Cup + 2 tbsp Plain Flour/Maida
1/4 Cup custard Powder
1 1/2 tbsp of warm milk
1/4 Tsp saffron strands
1/4 Tsp of baking powder
2 Tbsp chopped pistachios

Method:

Soak saffron in milk. Let it sit for 5 minutes. Using a spoon, mash the saffron to get the maximun flavor. Keep aside.

Meanwhile, beat butter and sugar till light and fluffy. Add milk – saffron mixture and pistachios. Mix well. Start adding sieved maida, custard powder and baking powder. Using a spatula, bind everything together to form a dough. You shouldn’t bind it like a roti dough. Just mix everything nicely.

Divide the dough into equal lemon sized balls and give it the shape you desire. Bake in a preheated oven for 15 minutes at 180 degrees.

Notes:

*All ovens are different so timings may vary.

* Take it out when sides turns brown.

* I used salted butter. The original recipe calls for unsalted butter.

Woww they luk so tempting…can i hv one. 😊M new to baking..i havent baked anything till the date can you pls help.me out with my query…i want to ask we have to put the desired shape of cookies in what kind of tin for baking …i know i am asking a stupid question but will be happy if you tell me…thenks fr bearing me…😊

    • Hello Anshika, Thank u for stopping by πŸ™‚ You won’t have any problem following this recipe even if you are a new bie in baking πŸ™‚ I used a big steel plate/thali to bake these.. You can also use any non stick or aluminium baking tray.. Just make sure to grease the pan with oil nicely before you keep the cookies.. U can also use butter paper/parchment paper.
