White Sauce Pasta

I am big big fan of whIte sauce pasta. Yumm πŸ˜‹ My health freak husband gives me some weird expressions whenever I mention butter, ghee, cheese etc in front of him πŸ˜… LOL. But that really doesn’t stop me from cooking anything πŸ˜„ Though I love pasta, but I don’t make them very often. I started making pasta when I was in delhi. My brother and one of his good friends, loved pasta made by me. Sometimes, I used to pack it in my lunch box for my office friends. They equally loved it. I still remember a guy in my office, calling me for the recipe 😁 I made this for the 1st time back in 2010. I did google a lot at that time but since I have been making it from long time now, every ingredient used is as per my taste.

Ingredients:

1 cup cooked pasta of your choice
1 cup Veggies of your choice
Finely chopped garlic
Butter

For white sauce:

1 cup milk
2 tbsp wholewheat flour
Salt to taste
Pepper powder
Pasta seasoning
1 or 2 tbsp of butter

Method:

In a pan, add butter followed by finely chopped garlic. Don’t let the garlic burn. Add cooked pasta and veggies. Saute for a minute and transfer to a plate. Keep aside.[]
In the same pan, take butter, add flour and mix it properly. Make sure pan is not too hot otherwise the flour will burn. Roast the flour in low flame till the rawness goes. Now add milk to it and mix it properly. I have used a whisker here. Make sure no lumps are formed. Keep the flame low. Keep stirring the sauce in between. The sauce will thicken soon. Add salt, pepper, seasoning, mix and cook for a minute. Now add the pasta with veggies to the sauce and mix. Add some more milk to get the desired consistency. Cook for a sometime and switch off the flame. Done. Sprinkle some cheese if you want (I didn’t) and serve.

Tips:

I added 2 cups of milk as I wanted the sauce to be thick. You can adjust the quantity as per your preference.

I added steamed broccoli. You can just sautΓ© it properly using butter.

You can add sweet corn, red and yellow bell pepper, baby corn, steamed carrot, mushroom, chicken, sausage etc to it.

Add chilli flakes to your portion. I skip it for Rahyl.

You can add cheese or cream to the pasta as well.

You can completely skip adding the pasta and make veggies in white sauce. Tastes amazing.
